Example: People are paying $12 for a kick-ass Grilled Cheese sandwich at Caseus in New Haven. Their food cart (called The Cheese Truck) sells a stripped down version for $5...along with soups and salads. According to Reveries, it just might be about the need for "comfort food"...which always spikes in recessionary times.
Regardless...if you see a line out the door? Even if it's for fried baloney sandwiches? That's the stuff of Culinary Tourism.
Check your food snobbery at the door and promote it.
