Beyond connecting the dots that so few restaurateurs seem to be able, or willing, to do (she knows that her business is up as much as 30% in a good convention year...and her restaurant is not exactly within walking distance of the convention center for most), she simply nails the final question:

leaders who run Delta Air Lines, Visa, Royal Caribbean Cruise Lines and
Hyatt Hotels, Maryann shot back:
"I absolutely belong at the same table. In
travel and tourism, Mise en Place is the kind of business that
creates a destination and makes it distinctive."
